What is the regular recipe that you use? Are these sausage balls mostly bread with just a bit of meat, or closer to meat balls with the bake mix intended as a binder?

Sausage-Cheese Balls
These little appetizers make a big hit with any crowd. They continue to be one of our most-requested recipes!
3 cups Original Bisquick® mix
1 pound bulk pork sausage
4 cups shredded Cheddar cheese (16 ounces)
1/2 cup grated Parmesan cheese
1/2 cup milk
1/2 teaspoon dried rosemary leaves
1/2 teaspoon parsley flakes
Barbecue sauce or chili sauce, if desired
1. Heat oven to 350ºF. Lightly grease bottom and sides of jelly roll pan, 15 1/2x10 1/2x2x1 inch.
2. Stir together all ingredients, using hands or spoon. Shape mixture into 1-inch balls. Place in pan.
3. Bake 20 to 25 minutes or until brown. Immediately remove from pan. Serve warm with sauce for dipping.
(although I've never served them with sauce for dipping.)

Oh, ok, I think I have had those before. Hmm, I am not sure if bake-mix would work out exactly right or not, I suppose it depends how sensitive you are to the soy flavor of the bake mix. You could always try a smaller version of the recipe and report back how it works. There are other bake-mixes out there that lack the soy-taste of the Atkins one, one of those might be worth checking out too.
I've tried the CarbSense Zero Carb Bake mix for other things and didn't find it to have a funny soy taste--have you had that one Nullo? if so what do you think?

Yes, I actually like that one quite a bit. I am thinking that doing a home-brewed mix of WPI, Oat Fiber, and Corn bran might give a more Bisquicky taste to this, I actually remember liking Sausage Balls, so I will probably play around with and try this out later this week.

Yea, I think everyone likes these! Seems like every party I go to during the holidays someone will bring them! they are a great little snack, so please let us know if you come up w/ a good substitute for the bisquick!

Yes they are a holiday staple here in the south! i just got done making a batch. I used the carb sense mix. The consistancy was not right and I had to add more sausage. The flavor is not right either. Oh well I tried.
hey Nullo, they re-formulated the Atkins Bake Mix about 8 months ago. It contains wheat gluten and corn starch. The last time I looked on a box, it didn't indicate if the corn starch was a low glycemic corn starch or the regular stuff. IIRC, 2Big called them and they didn't know either.

Giving up that easy? These are definately on the burner as a future project of mine, but I have a couple other major ones to take care of first...
Tomorrow night eggplant lasagna is on the plate, and then I have to perfect my LC cinnamon rolls and the glaze for them.
Bisquick is flour, salt, baking soda, and shortening. So, add a little butter and water to offset the sodium, and a mix of LC flours of some variety, a bit of baking powder, and I should have something that approximates Bisquick. Of course, since white flour has no taste, whatever I end up usign will taste _different_ simply because it tastes like something. I bet if I use a nice spicey sausage, maybe some dried herbs, and a sharp cheddar I can offset this though.
Here is one from our very own recipe site. I have made this with Atkins bake mix and did not like it. Tried it again with Carbsense bake mix and liked it much better. I did not use spicy sausage the one time and left out the jalepenos, they still taste good. Hope this helps and

Spicy Sausage Cheese Balls
Ingredients:
1 1/2 pounds hot sausage
1 1/2 cups Atkins baking mix
4 cups shredded cheddar cheese
1/3 cup jalapeno(optional)
1/3 cup onion(optional)
garlic powder to taste
chili powder to taste (I left this
out)
*not for induction*
How to Prepare:
Mix all ingredients thoroughly.
Form into 1" balls and place on
ungreased cookie sheet(use one
with sides as some grease bakes
out). Bake at 375 for approx. 15
minutes or until golden brown.
At 1" this makes about 60 balls.
I baked them for about 20-30 so
keep an eye on them.
Note: I left out the optional
ingredients to make less carbs.
This ends up being 2 carbs for 4
balls.
You could also freeze some to
cook later or cook them all and
freeze some to microwave for snacks.
