  • Jicama recipe for girls ;) Baked apples?

    It's funny that the other thread is down there about Jicama because I just purchased my first one this weekend. I thought I read somewhere that they can taste like apples and are good for cooking with some cinnamon, butter, splenda and such to taste like baked apples. I can't find a recipe though. I was going to just make up my own unless ya all know of a good one?

    BTW, I freaked a bit putting it into Fitday. 11.47g carbs?! The fiber is really good too though so that makes it okay right?

    OooOooOoooh I love jicama!

    I eat it like an apple, peel it and eat it! LOL YUM.

    I don't really care for it cooked because it never really softens. I like chayote squash better for making cinnamon apples with butter, cinnamon and splenda. AND it looks like apple when it's cut up.

    Anyway, Jicama is considered a "salad" veggie, so you can have 2 cups a day provided you have the room in your carb budget. AND it has LOTS of fiber and is really good for you.

    I went to the market saturday and bought 13 of them....I gave 5 to my mom and 8 for me ! I AM the jicama queen. hahhahah

      That is so funny! I just tried it raw and it's very good! Crunchy and a little sweet! Hubby is still undecided - he says 'different'. Haha! I will def'ly be getting more! Thanks!

          Is jicama allowed on induction? Anyone know? I love it, too!!!!!!

            That's funny Joy, someone was wanting to know what to do with Jicama the other day, I gave them your name and said....'Joy (Validrogue) is the Jicama Queen!' Great minds think alike somedays!! haha.

              YES, Jicama is allowed on induction! AND it's on the "salad" veggie list, so you can have 3 cups a day if you want (and can "afford" it in your carb budget).

                      I just bought a large one last night...I like to cut it up and put it in a baggie with cin and splenda, then it's ready to go when I am.

                      I've also cut it thin and used it as a "chip".
                      just bought some asparagus...anyone have a favorite recipie they want to share with me.
                      I've tasted it before, but never bought it or cooked it.

                        This is a recipe for OWL, but just leave out the walnuts and it will work well for induction and is absolutely YUMMY if you can find the olive oil.

                        Jicama cut up in bite sized pieces
                        Walnut pieces
                        Blood Orange or Lime flavored Olive Oil by International Collections
                        Sea Salt

                          For giggles on the 'Let's Talk Jicama With Joy' show:

                          Jicama Coleslaw



                          Ingredients:

                          5 1/3 cups cabbage, shredded

                          2/3 cup green pepper, julienned

                          1 small jicama, julienned

                          1 1/2 teaspoons chopped jalapeno pepper

                          2/3 cup mayonnaise

                          4 teaspoons lemon juice

                          4 teaspoons red wine vinegar

                          1 tablespoon splenda



                          Method:

                          In large bowl, mix together cabbage, peppers and jicama. In food processor or blender, puree jalapeno. Add mayonnaise, lemon juice, red wine vinegar and splenda. Blend. Pour dressing over cabbage mixture and mix well. Serve cold.

                            I think that sounds delicious! I wish I could eat more jicama, but my intestines don't allow more than 1/2c. in a day. Joy, you must really be made of steel.
