Easy as pie. Any all-meat chili recipe with nothing in it except for meat and spices and tomatoes is low carb, if you limit the tomatoes to a reasonable amount - say, 1/4 cup of tomatoes and other spices per serving of the chili, the rest being meat.
Brown 2 lbs. ground beef, with a med chopped onion cooked in it. Drain off the grease. Add to meat mixture 1 - 14.5 oz can of tomatoes, chopped( on tomatoe can 4g carbs per 1/2 cup) , 1 small can of tomatoe sauce(4g. carb). Add water if needed to get the right amount of liquid.
I season with garlic salt, wostershire sauce, 1 tbsp. I also cut up a jalapeno pepper into the mixture. Chilli powder to your taste, I add 2 tbsps, sometimes more. Black pepper. Turn down to low heat and simmer til all is tender, aprox. 30 minutes.
Should make 4-6 servings, so per bowl it shouldn't have many carbs.
Serve with a little grated cheese on top. Yummy!
