    Hello! I'm looking for a tested and loved breakfast casserole that I can whip together christmas eve to put in the oven while the kiddies are opening gifts. I don't want to spend the day in the kitchen. Btw my huuby doesn't eat veggies so something that I can modify (ie onion powder instead of onions) would be wonderful! Thank you!

    **edited to add it should be induction friendly, since I plan on staying on induction as long as it takes to get rid of the carb cravings**

    EARLY RISE BREAKFAST
    12-16 ounces bacon, chopped and fried until crisp
    1 pound pork sausage, browned
    Other meats of your choice, such as ham, roast beef, etc.
    12 eggs
    1 cup heavy cream
    1/2 cup onion, chopped, 2 1/2 ounces
    1/2 cup green pepper, chopped, 1/2 medium
    4 ounce can mushrooms, drained, optional
    Salt and pepper, to taste
    8 ounces cheddar cheese, shredded

    Beat the eggs in a large bowl; beat in the cream. Add salt and pepper to taste. Arrange the meats, onion, green pepper (I sautéed the onion and peppers along with the sausage), mushrooms (if using) and the cheese in a greased 9x13" baking dish. Pour the egg mixture evenly over everything. Cover and chill overnight, if desired. Bake at 350º for 50-60 minutes, until golden brown and knife inserted comes out clean. If not chilled, bake about 40-45 minutes.

    Makes 8-12 servings
    Can be frozen

    Per 1/10 Recipe: 677 Calories; 57g Fat; 37g Protein; 4g Carbohydrate; 1g Dietary Fiber; 3g Net Carbs
    Per 1/12 Recipe: 564 Calories; 47g Fat; 31g Protein; 3g Carbohydrate; trace Dietary Fiber; 2.5g Net Carbs

    This would make a very nice entree for a brunch. Even cut into 12 pieces, the servings are generous. My husband and picky-eater son both liked this.

    When I made it, I didn't let it chill overnight and I used already chopped frozen onions and peppers, and it was a little more watery than it should have been ( should have followed the directions exactly and sauteed the veggies with the sausage!). Next time I will use fresh or thaw and drain the frozen! Since your DH doesn't like veggies, I'm sure you could use the onion powder/seasonings or whatever veggies he will eat or maybe split the batch into 2 smaller pans instead of the 9x13 and make one with veggies and the other with more meat. Hope this helps!

      6 eggs
      1 cup heavy cream
      8 ounces sharp cheddar cheese, shredded
      1/2 pound hot sausage
      1 can green chiles
      1/2 teaspoon salt
      Dash pepper
      Garlic powder
      Dash Spicy Seasoning Salt, optional
      Dash toasted onion powder or regular onion powder, optional

      Cook sausage until slightly browned; season with salt, pepper, garlic powder and onion powder, if desired. Beat the eggs and cream with the salt, pepper and desired seasonings. Put the sausage in the bottom of a greased pie plate. Top with cheese and green chiles, then pour egg mixture evenly over all. Bake at 350º for 35 minutes or until a knife inserted in the center comes out clean. Let stand 10 minutes before slicing.

      Makes 6-8 servings
      Can be frozen

      Here's another good, easy quiche. This was modified from my Mom's recipe for Chili Cheese Casserole. It is a staple around here for the holidays. It is very tasty. HTH
