    Hi,

    I am looking for a quick lunch alternative and thought of Scotch Eggs. Could anyone help me convert this recipe please. I need assistance with the Flour and Bread Crumbs. I thought of Flax for the flour but not sure about the bread crumbs. Ground pork rinds maybe? :

    Scotch Eggs

    So fattening but so good! This recipe makes 6 Scotch eggs.

    6 hard-boiled eggs, well chilled
    1 pound breakfast sausage
    1/2 cup flour
    2 eggs, beaten
    3/4 cup fine bread crumbs
    Vegetable oil for frying

    Peel eggs and set aside. Divide sausage into 6 portions. Roll each egg in flour and with hands press a portion of the sausage around each egg.

    Dip sausage-wrapped eggs into beaten eggs and roll in bread crumbs. Heat vegetable oil to 350 degrees Fahrenheit.

    Cook each egg in oil about 4-5 minutes or until sausage is cooked and browned. Drain on paper toweling. Serve warm.

    Hi.

    I make Scotch eggs every couple of weeks--really nice convenient food.

    Anyhow, I don't use any flour or bread crumbs. You can use finely crushed pork rinds if you want, but I don't find that necessary. The taste is the same and the appearance is good too.

    You might want to use ground pork or a mixture of ground pork and beef (or chicken and turkey--depends on your tastes) and season it according to your tastes, instead of the sausage meat. The sausage meat has alot of fat (which isn't bad), but the sausage meat will shrink while frying and it might not cover the egg completely after its cooked. So if you do use sausage meat, make sure you really seal the edges properly and use alittle more sausage than normal to make up for shrinkage.
