At work,we have to prepare dinner for Board Members. The CEO was on the OWL phase and we had to make things helpful for him. My part was to help with dessert. I can't remember where I found it but I found a recipe that was only 1 carb per "ball". It was like a peanutbutter ball and one of the ingredients was cream cheese and of course the p-nut butter(lo carb) and I also remember you could use chunky or smooth. It was a huge hit. The CEO came to me personally and asked for them in certain meetings(Once a week meetings for board) I even made them for a cook-out and that was the only dessert I didn't have left. No one was lo carbing then,it was just that good. Can any one please help me? I'd like to make them again when I reach that point. Thanx.

I was interested in seeing this recipe, too, so I went a-searchin' to see what I could find.
I have not tried any of these recipes (believe me, I WILL be experimenting when I have climbed back up to the nut rung LOL) and neither of them have the carb counts. But here goes...
Chocolate Peanut Butter Bites
8 oz. cream cheese
2 tsp. sugar-free peanut butter
1 1/2 tbsp. water
6 packets Splenda
1 1/2 tsp. unsweetened cocoa
1/4 tsp. almond flavored extract (optional) How To Prepare: Beat peanut butter into cream cheese with 2 packs Splenda, 1/2 tsp. of the unsweetened cocoa and almond flavored extract if using. Refrigerate mixture until firm. Slightly dampen hands and pinch off a marble sized piece of the cheese mixture and roll into a ball. Do this with the rest of the cheese. Freeze for 30 minutes in a single layer on wax paper. Mix remaining Splenda and cocoa. Place in a gallon sized zipper bag and add frozen cream cheese balls. Shake gently to coat. Store in refrigerator in a single layer to prevent sticking.
I found the original receipe for these cheese balls on this site and modified it with my favorite flavors. Trust me, these are delicious and addictive! Makes about 15 cheese balls.
Peanut butter Cremes
1 stick butter
8 ounces cream cheese
1 1/2 cups peanut butter -- creamy
2 cups splenda
1 tablespoon vanilla extract
Darryl Lea chocolate chips -- optional
How To Prepare: In a food processor
combine butter and cream
cheese and blend well. Add
in the peanut butter,
splenda and vanilla and
combine well until very
smooth. Place mixture into
a piping bag with a large
star tip and pipe 1
tablespoon of mixture onto
a buttered sheet pan,
continue piping, until
finished.
Press 3-4 chocolate chips
into the candies. Place in
freezer to harden, then
store candies in refrigerator
in a tight lidded container.
Makes 60 candies

There is a recipe for pbutter fudge that has pbutter and vanilla SF pudding, I cannot remember the other ingredients arg! I have been looking all over for that one lately.. danged post-partum cravings!
