You can use any meatloaf recipe that sounds tasty. Just use two eggs for every pound of meat and add whatever vegetables you like - chopped celery, mushrooms, etc. Shredded cheese also goes over well. You really do not need any breadcrumbs or flour in meatloaf, and you'll actually find it tastes better without that stuff in it. I suggest pouring a low carb tomato sauce over the finished product rather than incorporating too much watery stuff in the meatloaf itself to help it hold together better.
I got this off of another site, don't remember the name of it, but it goes like this:
2lbs hamburger
3/4 cup grated Ramano cheese
1 large egg
1/4 cup parsley
1/4 cup heavy cream
1/4 cup tomatoe sauce
5-6 strips of crumbled bacon
salt/pepper to taste
Mix all ingredients together if to moist add more cheese. Shape into a loaf and place in a pan and take a pastry brush and coat the top with a little tomatoe sauce
Bake at 350 for 45 minutes
NOTE: use no bread
The recipe staes 6 carbs in whole loaf (from tomatoe sauce) but I haven't entered it in Fitday to tell you.
