  • Cinco de Mayo Fiesta!

    We're having a fiesta at my work and everyone is bringing a mexican themed dish. Need something yummy..and easy to make enough for a lot of people. Anyonme know any good low carb mexican dishes I can make? Appetizer, main dish or dessert...I'll take whatever you got.

    I know I'm going to be bombarded by chips and salsa (yeah, real original) so something unique gets extra points

    Appetizer - stuffed peppers - you can use jalapeno or the chili peppers - slice open, stuff with seasoned ground beef, cover with cheese and broil....mmm!

    Main Dish - Fajitas!!! In addition to the tortillas, also take some bibb lettuce (or other soft lettuce0 to use to wrap with.

    You can also make a Atkins friendly Huevos Rancheros by eliminating the refried beans.

      One thing you do't often see at those work type of BYO thing is soup. Soups are great because they are easy to upsize for as many people as you want. One absolutely delicious mexican soup you could have is Albondigas soup.

      1 large can solid pack tomatoes
      1 qt. water
      1 clove garlic
      2 onions, chopped
      2 fresh green chile peppers
      1 tablespoon cooking oil
      1 teaspoon chili powder
      1/2 teaspoon oregano
      salt, cayenne pepper to taste
      1/2 pound ground beef
      1/2 pound ground pork or pork sausage
      2 eggs
      Put tomatoes and water to boil. Saute garlic, one onion and one chopped, seeded chile in oil. Add chili powder and one half cup of soup water to vegetables. Stir until smooth and add to soup. Season with one quarter teaspoon oregano, salt Cayenne. Continue simmering. To make meat balls combine meat, other onion, other chile pepper, seeded and chopped, one quarter tsp oregano, salt, and eggs. Mix by hand for at least 10 minutes until everything is incorporated. Gently pat out the albondigas the size of walnuts (and fill with desired fillings) and drop into soup. Cook for another hour

        Or how about Crock Pot Salsa Chicken. Its very easy to make and transport and u can plug your crockpot in at work so it stays warm.

        6 boneless chicken breasts (chopped)
        2 cans corn
        1 cans black beans {u can leave these out if u arent to that ladder rung yet)
        2 cups salsa
        8 ounces full fat cream cheese
        salt n pepper to taste

        Toss all ingredients..except cream cheese...into the crock pot for 6hrs on low..then add the cream cheese for 10 mins or until melted.

        Its great over rice or chips for non-atkiners....

        For me, ive substituted the corn and beans for legal veggies..zucchini and peppers. Yum!

          Guacamole--avocadoes, lime juice, minced garlic, minced onion, minced jalapeno pepper, minced cilantro. Mix together. Garnish with chopped tomato. Cover tightly and serve.

          Along the line of Grant's soup, you can make tortilla soup.

          If you leave out the tortillas for your serving, it will be perfect for your Atkins.

            I like this recipe from Linda's website:



            GREEN "ENCHILADA" CHICKEN CASSEROLE
            4 cups cubed cooked chicken or turkey
            2 teaspoons Seasoning for Tacos
            8 ounces cream cheese
            1 tablespoon minced chives, optional
            7 ounce can Green Mexican Salsa
            4 ounce can chopped green chiles
            6 ounces Monterey jack cheese, shredded
            4 green onions, chopped

            Grease an 11x7" baking pan. Put the chicken in the pan and toss with taco seasoning to coat. Soften the cream cheese and whisk well with the chives and green sauce in a medium bowl. Stir in the chiles. Pour the sauce evenly over chicken. You can mix it in if you like, but it's not necessary. Top with the cheese. Bake at 350ยบ 25 minutes, until hot and bubbly. Remove from the oven and immediately sprinkle with the green onions. Makes 6-8 servings

              What about that 7 layer "dip", minus the beans and use ground beef instead (okay so that's a "taco salad")? And use pork rinds and veggie slices as "chips".

              Ole'! Sounds like a fun time to be had at your work. Is everyone coming in authentic garb?
