  • Key Limes

    While in the grocery store this weekend, the BF saw a bag of key limes. Looked at me with a puzzled expression and asked what they were. oh dear heavens. Hes never had keylime pie. Well we cant have THAT!!! I havent had (or made) one in years and years. and I LOVED it once upon a time. it was the dessert I used to make myself for my own august birthday. who needs cake! gimme the keylime pie!


    So uhh.... has anyone made a keylime pie or cheesecake even that is fabulous?

    (Im on legumes, the BF eats what is made LOL. seriouisly, hes been watching what hes eating but if I make it, he eats it.)

    Ive got the crust figured out (the nut crust from Cheesecake will be perfect and Ive more then enough almond flour to do it well). Id rather not turn on the oven because its hot here, but I will if I need to.

    Anyone ever use KeyLimes in anything else other then pie??

    You can make a legal custard using the key limes as flavoring---I would grate the lime skins into the custard base to have a more pronounced lime flavor.

    Otherwise, use the limes like you would any other lime/lemon:
    1. viniagrette dressings
    2. marinades
    3. to 'brighten' the flavor of cold soups
    etc.

      I tried a couple of times to make a low carb key lime pie, but have yet to get it close enough to the real thing. It's tough without the condensed milk. I did see a condensed milk recipe using sweetener and carnation thick cream but haven't tried it yet

      I did make a cheesecake and use key limes to flavour it and it came out very good though!

        Alright Sadie, how did you do the cheesecake?
        I found the recipe for Doms "cheesecake" and Id love to make the keylimes work with it. (Id be happy making a real cheesecake as well but if I can do the easy Doms one, Id love to).

        Megs, I never thought of custard. I might have to give that a shot!

          The cheesecake i made was a baked one so the result would be different thanthe doms cheesecake, but you could try it? You'd need to adjust the amount of sweetener for the key limes, and you migh want to up the creamcheese and add a bit less sour cream so it doesn't get too runny depending on how much key lime juice you add.

          My cheesecake was just a basic cheese cake recipe from the philadelphia package, i added some key lime juice and sweetener to taste (maybe a half cup of juice?), and an extra 4 ounce of cream cheese so it wasn't too runny. I also added a bit of green food colouring just for looks.

          I make cheesecakes all thetime and i usually just add whatever flavour i'm in the mood for. Cheesecakes are actually pretty easy to tweak compared to other baked deserts.
