You know, i'm not real sure where this belongs

  • You know, i'm not real sure where this belongs

    but, I thought this was the perfect place. Basically, i'm looking for thoes easy things to put together that are great for lunch boxes or people on the go. I don't care if they are classified as lunch, dinner or inbetween. I'm in the induction phase, but things out of this phase are good too(for futrure use of course :yes ). I'm talking deviled eggs and pepperoni with cheese type foods.

    I am a paramedic student and my schedule is crazy. I love things that I can prepare in a batch that lasts for a few days and take with me in my lunch box or even things that can just be cut up and thrown in a baggie, maybe even microwaved later if called for.

    I take my lunch everyday. here are some things I routinely make up in a big batch.

    quiche, I will make a crustless quiche once a week...it keeps well and is great cold and can be changed to different flavors easily. I do bacon cheeseburger quiches, pizza quiches and taco quiches, italian sausage quiche...just about anything works well.

    stirfrys - also perfectly fine cold. some of my favorites, sausage, tomatoe, red pepper onion stirfried in olive oil, or cabbage, bean sprout and bacon stirfried in sesame oil. beef, broccoli, red peppers and a bit of soy sauce in sesame oil is also yummy

    mashed turnip/pork and cheese bake is also something I usually make up in a big batch and eat through the week.

    some other things that can help for snacks. flax crackers are quick to make in any microwave. flax pancakes keep well, I sometimes carry one or two with me when I know I am going to be out all day.

    on sunday boil up a dozen eggs, than they are ready for eating just like that, or deviled eggs, or egg salad.

    cube up some cheese and salami and keep them in containers in your fridge, if you need something to go just grab a few of each, put in a sandwich bag and you are good to go.

    other than that, my lunches consist of the left overs from the day before...I have learned that just about anything is perfectly fine cold, so now I eat grilled fish, hamburgers, sausages, cooked veggies...all cold.

      Well, if you have access to a microwave, the sky is the limit. Wednesday is my cooking day because I work Th-Su nights. I use Glade-ware to box them up and they sit on my desk for five hours before I eat. Haven't had food poisoning yet, although I could just as easily put it in a fridge (we have a full kitchen in the newsroom) if I wanted. Last weekend I had pork ribs and saurkraut. the weekend before, a chicken stir fry. Click on my www link below and see if there's anything you like.

        I make these:



        They are induction friendly and they make good sandwich bread. I fill my sandwiches with anything from tuna or chicken salad to leftover roasted turkey breast, chicken, etc.

        Store them in a bag in the frig for up to a week.

          Bruce......I do the same thing! No refrigeration and I go along with the same premise - no food poisoning yet.......lol

              I usually make tuna I put one or two cans of tuna in a bowl with mustard and mayonaise then i add a hot pepper hoagie spread to it try it is good and no carbs... great for induction
