Looking at ingredients for one recipe I see you will have to do a lot of substituting to get a similar taste so it might be better to invent a new recipe rather than adapt.
You could sub an almond flour/flax based pastry I suppose, but the distinct taste of the dish comes from caramelising condensed milk, so unless you can get a 'sugarfree' version I think it might be too difficult. Half a teaspoon powdered instant coffee

Of course if you want to use real bananas you would need to wait till you are at the correct OWL rung.
