  • *tofu*

Ok, so I bought some medium firm tofu today at the supermarket and I have no idea what to do with it.

I've never cooked or eaten tofu in my life but wanted to give it a try.

Anyone have any yummy recipes that I can try?

ok tofu is my favorite food... so:

The BEST thing an atkiner can do with tofu is this (its stupidly simple)... cut two slices a bit thinner than the thickness of a piece of bread. Put some olice oil in a pan and fry it... then USE IT AS BREAD. I use it to make sammiches, or i use it to put dips and cheese and cold meats on.. its great!

    AS FOR RECIPES
Use it like you would meat. Make a stir fry with it. Cut it into cubes and put it in a mixing bowl with freshly grated ginger, garlic, some soy sauce and a little lemon juice and let it marinate for a few hours, then take it out of the marinade (keep the liquid but seperate it from the tofu). Put oil in a pan or wok and fry the little cubes of marinated tofu until their are crunchy then remove them. Make a stir fry, add in the rest of the marinade liquid, then chuck in the crunchy tofu when in almost finished cooking. It's great!

Tofu is great no matter what you put it with. I cut thin slices in mornings, cook it in a sammich press or on a pan, then put chese and vegemite (marmite?) on it. Its yum! Look up some vegetarian low carb sites!

Thanks very much for taking the time to tell me about tofu.

I'm gonna try it and hope I like it as much as you do.

      Thanks again!

Take 1 serving of silken tofu and throw it in your blender. Add a sugar-free flavored syrup (Da Vinci or Toriani). add a dash of cream or 2 dashes of cream mixed with water. Blend until smooth.

I make a wonderful "peach smoothie" this way. It's a small one, but sooo refreshing on a hot summer's day! Also a nice breakfast drink.

Cut the tofu into cubes. Pat them dry. Then heat a skillet. Add some oil. Pan fry the tofu on all sides until golden brown. Then you can add veggies--bok choy, green beans, mushrooms, etc. as you would for stir fry.

The other thing you can do is to put the tofu in the freezer---just put the unopened package in there. Let it freeze for at least 2 days. Remove it from the freezer and let it defrost. Drain. The tofu will have a spongy/bready texture. You can slice the block into cubes. Pan fry the cubes until golden brown on all sides. They make a decent crouton substitute for salads during Induction phase. Or slice the block into thin slices and pan fry until golden brown, drain on paper towels---they make a decent snack chip substitute.

Just a word of caution...if you have a thyroid problem, you might want to avoid tofu and other soy-based products because soy is known to aggravate thyroid disease.
