  • What's a b-day without the cake??

    I'm looking for some options and recipes for a b-day cake. Mine is coming up next month and I'd like to share a cake with the kids and hubby that I can stick candles in.

    I know cheesecake is a good option--anyone have any tried and true recipes to share-----cheesecake or other, that are larger than the traditional single serve?

    I don't know if you like flan (I love it), but the recipe in the DANDR book is soooo good. I didn't use the ginger, and next time I'm going to add a bit of no carb carmel syrup at the bottom of dish before baking.

    FLAN
    3 egg yolks
    2 eggs
    1 1/2 cups heavy cream
    1 C water
    9 packets Splenda
    1 T vanilla extract
    (2-3? T no carb carmel syrup)

    Heat oven to 350. In a mixer combine all ingredients (including 1 C water) EXCEPT carmel syrup, until smooth. Pour syrup into 1 qt baking dish then pour in rest of mix. Place in a roasting pan filled with boiling water that reaches halfway up the side of the baking dish. Bake 30-35 minutes until knife comes out clean from center. Cool on wire rack and refridgerate.

    Even if you don't use this as your b-day 'cake'--it makes a great special treat and is so tasty (it does, however, use a lot of heavy cream and Splenda, so probably not great for induction).

    I'm going to check back here to see if anyone has some type of flourless cake to try!

      You can make almost any cheese cake recipe you like. Sugar/splenda then I make an almond crust (if you are on that rung) otherwise no crust.
      Also pumkin pie is doable I use cream instead of evap. milk

        Thanks for the feedback guys. I actually LOVE flan. I could make that on a weekday sometime after I finish extended induction. That much splenda right now might send me on a bender.

        I think I might go with a crustless cheesecake. That's something everyone here can eat and I love cheesecake.

        Anyone try a cheesecake recipe and have great results?

            Happy Early Birthday! (I'm bad with dates so Im telling you now hahaha)

            There are so many options here. Cheesecake or all flavors. Some baked, some not, some made with SF jello. I think there are recipes for flour less chocolate cakes, logs, cookies made into cakes with whipped cream or cheesecake filling lol. I went searching for you for the ones I remembered getting good results/reviews from people. Check the ingredients, not all of these are induction friendly!

              I love cheesecake and I made the New York Ricotta Cheesecake for my birthday this year and it was so good! My whole family loved it, it makes a really large size and I never missed 'cake' at all

                  I'm moving up next Tuesday to rung one and then two weeks after I'll be on rung 2 so buy then I should be good to have this.

                    I got this from George Stellas Forum with other peoples tips on how to make it different ways. I basically just summed it up for everyone. I have never personally had it myself. If you want to read about it look under desserts.

                    Classic Almond Flour Pound Cake

                    This cake is used as a base for many different cake recipes. Try it plain, try it with different extracts and icing. Think of it as a basic cake mix recipe without limitations. Below are some variations others have put together.

                    · 1/2 cup butter (1 stick) softened at room temperature

                    · 1/2 cup full fat cream cheese

                    · 1 cup Splenda

                    · 5 large eggs, at room temperature

                    · 2 cups almond flour

                    · 1 teaspoon baking powder

                    · 1 teaspoon lemon extract

                    · 1 teaspoon vanilla extract

                    Cream butter, cream cheese and Splenda together, mixing well. Add eggs, one at a time, beating well after each. In a separate bowl, mix almond flour with baking powder. Add egg/butter mixture to flour a little at a time while beating. Add lemon and vanilla extracts.

                    Pour into greased 9"-10" Springform pan, bundt pan, loaf pan for 50 minutes, ring pan, (or 9" round cake pan) and bake at 350°F for 50-55 minutes. Makes 12 servings. 6.1 net grams of carbohydrate per serving.

                    You can change flavors for this cake by using different extract flavors and even food color if you like!

                    ** Slice and use as :shortcakes" for strawberry shortcake.

                    ** Use banana extract, cook in a loaf pan for banana bread.

                    ** Use banana extract, cook in a spring form pan, once cooked slice cake into 2 or 3 layers, ice layers with flavored whipped cream (using DaVinci syrups: banana, kahlua) then ice the cake with cream cheese frosting or chocolate syrup.

                    ** Use coconut extract for another great flavor!

                    ** I made this tonight with orange extract, vanilla extract and kept about 1 1/2 cups batter aside, mixed in about 2 T dark cocoa powder and made a marble bundt cake by mixing it together with a butter knife blade. Gorgeous and tasty! Going to have a slice with whipped cream tomorrow!

                    ** This just has to be bumped up! I made this over the weekend, and while it was baking, I got to thinking about my mom's "lemon cake". She takes a yellow cake mix, lemon pudding, eggs, etc and then when it's baked and still hot, she pokes it full of holes and pours a lemon glaze over it. It is moist, delicious, and when served hot it's to die for!

                    SO, I took splenda, lemon juice, and added the balance of the cream cheese and made a glaze. (Next time I'll leave out the cream cheese cause it was too thick and was more of an icing than a glaze) I poked it full of holes and poured the glaze over the top.

                    Dinah, when you made the lemon juice/splenda glaze, how much of each did you use. I didn't add the cream cheese, based on what you said. I had to guess at the amount of lemon juice & splenda. I hope I came close. I think I had about 1/3 cup splenda and maybe 1/2 - 3/4 cup lemon juice. I kept tasting until it was tart but not too sour.

                    ** I made this for Valentines day which just happens to be my daughters b-day. To the batter we added a few drops of red food color, and used strawberrry extract. Baked it in a heart shaped pan. After it cooled we made a frosting from cream cheese, splenda, few drops of red food color and frosted the cake, topped with a few whole strawberries and then drizzled it with George Stellas ganache.

                      Seriously?

                      It's the anniversary of your birth....
                      I've been thinking a lot about this issue because I just had my 50th Birthday..

                      I've come to the conclusion that it's the company and the event that is celebrated and not the food. I stayed on induction for my B-day and I was really proud of myself for not giving into pressure. Even though my husband would never have done it. I still felt pressure from the restaurant. They knew it was my Birthday. I told them up front that I did not want a piece of cake or a song... When the meal was over I saw the waiter starting to head toward our table with a piece of chocolate cake on a plate... I looked at him and shook my head. He turned and left. I was a little ticked that they would try to sabotage my effort.

                      So the food is only a major part of the event if you give in to it. Frankly I've noticed before that if you take a plate but no fork and walk around with it for a while and then set it down, no one will even notice if you ate it or not. You don't make a big deal and they will never even notice what you don't eat.
