  • Tuna steaks

    I've got those wonderful tuna steaks from Costco, but not sure what to do with them! I usually just fry them in a little butter or oil, but that's kinda boring. Any ideas to help liven things up?

    Oh, and I'm on the first level of OWL. Thanks!

    I marinate them by rubbing them with olive oil, salt, pepper, and fresh grated lemon rind. Cover with plastic wrap and toss in the frig for at least an hour. (I usually do this before I leave for work in the morning. When I get home they are nicely marinated.)

    When I get home, I wipe off the salt, pepper and lemon rind because they already did their flavoring. Then I grill them on my George Foreman grill. You can pan fry them too in alittle olive oil. After they cook, I set them aside and saute onions until they are soft but still have alittle crunch---you can cook them longer if you like. Put on top of the tuna steak, and squirt the whole thing with a lemon wedge.

    The other thing I like to do is to make a tomato sauce, like short version of puttanesca sauce, in the saute pan. Into the pan, I toss in some olive oil and a chopped tomato, a clove or two of chopped garlic and a little crushed red pepper flakes. Let that cook until the tomato is softened. Then added roughly chopped olives and capers. Cook to heat the olives. If you have fresh parsley handy, chop some of that and mix it into the tomato sauce right before serving over the tuna. If you have this over some spaghetti squash or zucchini or cucumber "noodles", you'll have a very nice supper!

    Zucchini or cucumber noodles are made the same way: peel the zuke or cuke. If you use the cuke, don't use that central seed area for the noodles.Then slice them into 1/8 inch planks, slice the planks into 1/8 slices. Lightly salt the "noodles" and set aside for about 15 minutes to drain away the excess liquid. Then rinse off the excess salt, gently squeeze the "noodles". Saute the noodles in butter or olive oil until tender but still having a "bite".

      Found something else that works nicely as well. I tried the ground up pork rinds with parmesan cheese and a few spices that I've read people used here for some other dishse. Coated the steaks and cooked them on medium-high heat in butter. Sooo good! For a dipping sauce I just mixed some capers with mayo. That also went really nicely with it.
