I found an old recipe of my Mothers for sour cream muffins that I have been playing around with. This is the best one I have come up with so far:
Dry Ingredients:
4 TBS Flax Meal
3/4 cup ground pecans
1 tsp. cinnamon
1/2 tsp baking soda
1/4 tsp salt
Wet ingredients:
1/2 cup sour cream
1 egg 2 TBS melted butter(no salt)
3 TBS Davinci vanilla syrup
Mix wet ingredients in one bowl, mix dry ingredients in another.
Add together and stir until combined. Kinda had the consistancy of pancake batter.
I used a 6 muffin tin sprayed with Pam. Baked at 350 for 21 mins.
They came out pretty good, but if anyone has any suggestions on how to make them better, I would appreciate the :help . Thanks
