I have a suggestion you might want to try...I only use 1 egg (some recipes call for 2). With 2 eggs it tastes too "eggy" to me...with 1 it has more of a "bready" consistency. So if you find it too eggy tasting you could try that.
Mock danishes are soooooooooooooo good...especially with some ground flax seeds mixed in (for fiber).

I tried cooking it different I wasn't crazy about the texture so this is what I did and I was very pleased it had a much creamier texture and better taste too. I used the recipe just as it was except instead of micowaving it I put it in a small frying pan sprayed with pam on med. high heat placed a lid on it and cooked it until set about 2 mins. I didn't try to flip it because it's pretty delicate. I flipped it on my plate cooked side up and boy was it good. I didn't need syrup or anything it really tasted like a cream cheese danish.
