  • Need lunch/dinner dorm room recipes

    Hi everyone,
    I'm so sick of grilled chicken or a hamburger patty with salad for lunch/dinner everyday. That is usually the only wheat-free (gluten allergy)/low carb option at my school's cafeteria. Does anyone have any suggestions for warm meals I can make in the microwave and keep in the mini fridge. I have access to a full kitchen every weekend, so things I can make and then keep for a couple days and reheat are good too. I am on the dairy rung, soon to be on the nut/seed rung. Recipes for warm meals that include vegetables are especially appreciated!

    On the weekend when you have access to that full kitchen, buy a family pack of meat (chicken thighs or chicken breasts, turkey parts, pork chops, etc.) cook them all in a very plain style --sauteed or roasted--and season them only with salt and pepper. Cool the cooked meat and store in refrigerator containers.

    The chicken/turkey/pork:

    Cut the cooked meat into strips.
    -Warm in the microwave and use for "fauxjitas" (sprinkle with lemon juice, chili powder, wrap in lettuce leaves)
    -Heat in the microwave together with vegetables (broccoli, green beans, cauliflower, asparagus, etc.) with a cream sauce (see below)
    Cut the cooked meat into cubes:
    - Make a brothy style soup---heat the meat cubes with veggies of your choice. Add boiling canned chicken broth.

    Cream Sauce/Cheese Sauce
    Mix equal parts of mayonnaise and sour cream in a bowl. You can warm this mixture up in the microwave and add grated cheese for a cheese sauce. Likewise, you can add dried herbs and spices to it for an non-cheese sauce. Whatever way, it makes a nice low carb "white sauce"

    An Almost Hot Brown Sandwich
    Put cooked turkey or chicken on a plate, add a layer of the cream sauce (flavor it with parmesan cheese). Nuke in the wave until heated through. Garnish with crumbled bacon and tomato wedges.

    Hot Chicken Salad
    Use the cooked chicken (or turkey). Make a chicken salad using mayonnaise, etc. Heat it in the microwave until hot and heated through. Serve with veggies. I like to stuff a hollowed out tomato with the chicken salad mix and heat the stuffed tomato in the microwave. You can stuff bell peppers too!

    Almost Pulled Pork or Chicken
    Shred the cooked meat. Put into a bowl. In another bowl, combine about tomato paste, chili powder, garlic powder, onion powder. Add some vinegar to your taste. Then enough water to thin it down to a ketchup-like consistency. Mix the sauce together with the shredded cooked meat. Heat through in the microwave.
