  • Brunch ideas?

    O.k. i'm going to a brunch and need to bring a dish? What do i bring? Help me fellow Atkiners

      Crustless quiche with zucchini, onion and spicy sausage?

      In a large skillet fry up 1 package of breakfast sausage (loose, not links or patties) & 1 medium onion, and drain the grease. Grate 1 zucchini and mix it in with the sausage/onion mixture. Beat 8 eggs with a couple teaspoons of water, and mix in a half cup of strongly flavored cheese (your pick). You can spice it up by adding some red pepper flakes, or just season with black pepper. Turn the burner to low, add the egg/cheese mixture, and put a lid on the pan and allow the mixture to "set" for about 4 minutes. Then top it with a little more cheese, and put it under a broiler, watching it closely to finish it off, until it's nice and golden brown. I keep the pan about 6-8 inches away from the broiler flame. Be careful not to let it burn.

        Miss Phode- that sounds good but i dont eat eggs?

        Disco- that's an idea, fried ham and veggie plate...

        That's my problem i dont eat eggs and i'm use to eating pancakes for breakfast.
