Additions to 1 Minute Muffins???

i would like to know What Additions can be made to 1 Minute Muffins... Unsweetened Shredded Coconut? Nuts? what have YOU tried? and what works BEST??

I add little banana flavoring and a few walnuts. Taste like banana nut bread.
