Mmmm... deviled eggs! Yummy, yummy! After boiling my eggs and peeling them, I cut them in half and put the egg yolks in a bowl. I mash them up with a fork and then add mayo and mustard. The amount depends on how many eggs you are fixing. I just add until the mixture is smooth and creamy.

I know other people add relish and paprika, etc... but I like mine simple. Also, my dad suggests using dry mustard, but I've never tried it.

Definately add dried mustard powder, paprika, and a little celery salt to the yolks as you mash. Cayenne makes a nice kick too. Don't forget to dust with paprika for appearance before serving.

Wow there are so many different things you can do with deviled eggs! If you want something other than the ordinary! You can cook sausage and crumble it up and add it to the yolk mixture. My favorite is to had crab meat, baby shrimp and dill! You can crumble cooked bacon to had too.

Pre Atkins era I would make deviled eggs with miracle whip and sweet relish..Lord dey wuz goot. :icondance :icondance

But now I use dill relish and regular mayo. And with laying hens producing 3 eggs per day(I know that doesn't sound like alot, but thats 21 per week)on the farm I make deviled eggs on a regular basis.
