  • I need a remake of this....

    This is a VERY popular pie for my family during the holidays ....I was curious is anyone out there could remake it to where it is legal for me to partake of...

    The recipe is...

    2 packs cream cheese
    1 can sweetened condensed milk
    1/2 cup lemon juice.
    graham cracker crust

    Can anyone help me make it a Atkins friendly pie??

    Just shooting off ideas here, but...

    Maybe you can sub the sweetened condensed milk with heavy whipping cream sweetened with Spleda or Sweetzfree.

    You could sub the graham cracker crust with a nut crust, depending what rung you are on...

    Not gonna taste exactly like the original (which I have tried back in the day and is awesome), but it may come close...

      Thats exactly what I was thinking......with the heavy cream and the splenda. I have made a nut crust before so that is probably what i will do again. I am on induction and plan to stay here for a bit so I will X the crust all together for now and just put the filling in desert cups!! I'll let you know how it comes out.

        The sweetened condensed milk is there to sweeten the pie. It also has a slight caramel flavor. The lemon juice is there to cut the sweeteness of the condensed milk--since lemon juice has very little lemon flavor.

        What you can do is use heavy whipped cream, fold it into the cream cheese. Sweeten it with a sugar substitute. If you want a lemony flavor, use either lemon extract or grated lemon rind.

        The caramel flavor is hard to duplicate. There is a splenda caramel syrup, but I don't think it tastes anything like caramel at all---that is caramel in the "burnt sugar" sense of the word. It does, however, taste a little like those awful "caramel" candies.

        Graham cracker crusts can be substituted with a nut-based crust, provided nuts are appropriate for your phase of Atkins. Otherwise, serve the filling in individual custard cups---that will lock you into a set serving size so you won't keep eating "just only more tiny slice" of it.
