I would really appreciate it if someone could share a good recipe for flank steak. I want something that is low carb, obviously, but I would also like instructions on how to cook it (temp/time in oven).
Okay, my standard recipe is to marinate the steak (overnight at least) in a very rich marinade. Then I throw it on the grill ... medium hot temperature on my gas grill and turn it after five minutes if it is carmelized on the under side, go a bit longer if it is not. Really depends on how thick the steak is. Cook the other side for five minutes, check it again. I like it medium rare ... so it is still pink in the inside.
My favorite marinade is 1 part worchestershire, 1 part soy sauce, a splash of EVOO and some fresh ground pepper and some seasoned salt. I put it in a zip loc bag in the fridge and turn it half way through the marinade (like put it in overnight, flip it in the morning, grill it in the late afternoon).
You cut flank steak at an angle against the grain. It is really good on salads or just to munch on the next day cold. Great protein item to have lots of leftovers of!

Slice it then against the grain, and put it in a big ziploc bag over night with some lemon juice, lime juice, ground cumin seeds, cayenne, a bottle of LC Beer (or some tequila), salt, pepper, and some mexican oregano if you can get it.
Next day fire up the grill or a cast iron skillet as hot as you can and sear on each side, then immediately serve.
Cuban steak is good too with the flank...try mixing up a home made italian dressing with lime instead of the vinegar....and then add some cumin ....marinate overnight and toss on the grill for just a few seconds on each side ...less is more slice thin against the grain....
How much cumin should I add? I like it, but usually add too much and that makes for a bitter taste. I have cumin seeds and powder, so if I ground up the seeds should I toast them first? How would I go about toasting them, if that is the way to go?
