  • Turkey Recipe

    Yesterday I made a Turkey and now I have all these left overs... I would like to make a soup.. But the only thing I have every had as a soup with Turkey was one with Rice, Carrots, Celery, Turkey and Broth...

    Any suggestions? If tried something like this...and grated a cauliflower for rice would that work?

    I haven't made this recipe but after thanksgiving (leftovers) I am going to make something close. I will change the items that I don't want to use or want to sub. Like Calorie Countdown for the milk and something for the flour. Basically needed as a thickener only. I loooove Chicken/Turkey Ala King.


    Low Carb Chicken/Turkey Ala King
    INGREDIENTS:

    * 2 cups cooked chicken or turkey
    * ¼ cup chopped onion
    * 1 small green pepper, chopped (about 3 oz)
    * 1 small can of mushrooms or 4 to 6 oz fresh chopped mushrooms
    * 2 Tablespoons oil or butter
    * ¼ teaspoon black pepper
    * 6 Tablespoons flour or less flour and a low carb alternative, see note
    * 1 cup milk or unsweetened soy or almond milk (carb count is for unsweetened soy or almond milk)
    * ½ cup cream
    * 1¼ cups chicken stock, or water with chicken Better than Bouillon or regular bouillon
    * 1 4 oz jar chopped pimentos
    * Salt if not using bouillon

    PREPARATION:

    1) Heat the oil or butter and saute the onion for 2-3 minutes. Add the green pepper and mushrooms, and cook until softening. Add black pepper.

    2) Add the flour,if using as a thickener.

    3) Add milk, cream, broth, etc, now. Add low carb thickeners now, and any flavorings such as Better than Bouillon. Add salt if needed. Bring to a simmer and cook for 3-4 minutes.

    4) Add chicken/turkey and pimento. Heat through.

    Serving Suggestions: Serve over "Cauli-Rice" or low carb toast (such as toasted Flax Meal Foccacia Bread). Alternatively, any low carb pasta or pasta substitute works well.

    Nutritional Information: Using above recipe, each of 6 servings has 5 grams effective carbohydrate plus 1 grams fiber, 17 grams protein, and 237 calories. The flour adds 2 grams of carb per serving. If you use only flour (6 tablespoons) to thicken, it would add 4 additional grams per serving. theres definitely better alternatives to that.

      The better alternative is to ditch the milk, chicken stock and the heavy cream completely. A "cream sauce" substitute can be made by mixing together equal amounts of sour cream and mayo.

        I am going to make a soup.. I was going to make my cauliflower like rice..but I threw my shredder thing away cause I have a new one coming from pampered chef..so I am going to just cut up cauliflower small in it

          thank you never thought of the mayo sour cream. Does it taste at all like mayo when you're done? I know some people used mayo in cakes and stuff so I would presume it doesn't taste.

          Yea I quit heavy cream awhile back mostly for the amount of weight I was losing in my wallet. Stuff is expensive here!

            IT doesn't have a mayo taste and it doesn't have a sour cream taste. They sort of cancel each other out and you have a savory tasting sauce base that is creamy and can be flavored with other things like cheese, herbs, etc.

            I had the idea for this when I read a recipe for a sauce called mousseline: it's basically a hollandaise sauce with unsweetened whipped cream added to it. Mayo is basically an uncooked hollandaise with less lemon. Sour cream is a thicker heavy cream with a slightly sour taste. So I figured mixing the two together, like you would for a dip, and heating it would yield a "white" sauce base. It does and it retains its thickness, it doesn't 'break' and it's bland enough that it can be flavored with other ingredients.

            If it's too thick, I suggest adding a tiny bit of water or heavy cream until you get the thickness you want.
