    I have a bunch of shrimp in my frezzer and want to make a shrimp scampi over some spagetti squash "noodles" Does anyone have a good easy tried and true recipie??

    You know, I don't go for that "scampi" stuff because it hides the flavor of the shrimp. I just defrost the shrimp and peel them. I dry the shrimp off really well with paper towels then I mix them with some ground black pepper and a little salt. I heat up a frying pan and add some oil. Then I put the shrimp into the pan in a single layer, making sure they don't over-lap and making sure I don't crowd the pan. I let them cook for about a minute or two or until they are pink on that side. Then I flip them over and let them cook another minute and remove them from the pan. I toss some sliced garlic into the pan and let that cook until it's fragrant. Sometimes I'll add a veggie, like snow peas or broccoli and let that cook. Then I add the shrimp back to the pan. Add about 2-3 tablespoons of water or a mix of water and lemon juice. Cover the pan and let it steam for a minute or two. Remove it from the heat and swirl in about a tablespoon or two of butter and serve.
