  • Low carb lasagne??

    Anyone know where I might find a good recipe for low carb lasagne? I am wondering if perhaps there is a recipe that substitues something else in place of the lasagne noodles. I am a lasagne freak and am starting to go through lasagne withdrawal since being on Atkins.

    Please help! :help

    With the exception of the noodles themselves, the ingredients are Induction-friendly. A few weeks ago, I had quite a lot of leftover cooked cabbage. I layered this on the bottom of a casserole dish, then added a layer of cream/eggs/cheese then tomato sauce, then more cabbage, etc. I topped it with slices of pepperoni. It was actually REALLY good -- and DH said "This taste like lasagna!"

    No specifics, but there's my suggestion

      Thanks a bunch. That's just it, I knew most of the other ingredients were induction friendly and thought it such a shame that because of the pasta noodles I'd have to pass up on lasagne..figured there had to be an alternative to the noodles. Cabbage? Who'd have thunkit? I plan to try it out sometime this week.

        I just want to include - I had pre-cooked the cabbage. Cut a head in 1/6ths, then boiled it (you can steam it too) until just crisp tender, not mushy. Drain completely. Those leftovers sat in my fridge (covered) for a good 24 hours if not longer.

        I also made the "lasagna" (though I didn't know that's what it was at the time) ahead of time, covered it, put it in the fridge for the day, brought it out that night and baked it. I think that helped the cabbage absorb the flavors of the tomato sauce.

        Let me know how it turns out If it wasn't a fluke, I may have to add a recipe into our recipes section.

          Sure thing. I plan to buy the ingredients tonight..might even make it tonight. I'll let you know how it turns out.

            I use thinly sliced eggplant in place of the noodles. Its yummy too!

              You can also use the large "sandwich" type pepperoni slices.

                Thinly sliced eggplant...large pepperoni slices... Thanks guys... I wouldn't have ever thought of either of those on my own. Definately plant to give those a try.

                  I made some with the eggplant last week. I had some extra cheese filling and homemade tomato sauce so I picked up a couple of huge portabello mushrooms yesteday, I'm planning to saute the mushroom caps for a few minutes in olive oil and then stuff them with the leftover filling and sauce and top with a little mozarella and bake til bubbly, I can't wait to try it!

                    I made lasagna last week with low carb tortilla shells as the noodles. I have a round baking dish and just added a single tortilla in the layers instead of noodles. It turned out really good. I will definitely make it again.

                    I have made it with eggplant as well. I am not a big veggie fan, but it is a great way to hide some veggies for me in a yummy recipe! And I always throw in some spinach as well!

                        Eggplant is the best option in my experience. If you get enough of the water out and lightly roast them they are a perfect textural match for the noodles, and the flavor goes really well to boot.

                          I cook them first in the microwave, covered, just with salt, max heat about 10 minutes. And then roast them .... as they cook in the microwave they don´t need so much oil in the pan :nod
