  • Replacement for Turkey Stuffing!!

    Im searching for a way to get the tste of stuffing without the carbs!! Could I use chopped cauliflower instead of bread?

    I'm looking for this too, and experimenting!!

    I tried cauliflower - it was a soggy mess I have found this recipe, but have not yet tried it out.

        this isn't quite a recipe because I'm not good at that and I just threw this stuffing together myself.


        I used the easy microwave flax meal bread recipe

        I put it in a microwave bowl so it comes out as a thick round muffin type bread

        I believe its
        2 1/2 tbs flax meal
        1/4 tsp baking powder
        dash of salt
        (mix together)

        then add 1 egg
        1 tbs melted butter
        1 tbs water


        cook it for like 30 seconds to 1 min until it's bread like. Don't want it too hard and dry since you will be cooking it again.
        Depending on how much stuffing you want you need a few of these made.
        Plus I've done a variation using a piece of low carb bread as well (or added the carbquik cornbread muffins) both work.

        You can try a small batch of this first and see if you like the taste just using the flax bread before you make the large batch


        break up all your flax bread you made
        add
        1/2 an onion or so
        some chicken broth until its moist but not runny
        sage (to taste) we like quite a bit of sage.
        You can add celery (my hubby doesn't eat it)
        boiled eggs
        basically whatever you would normally use in stuffing (other than the bread) as long as it falls into the low carb WOE.
        add an egg for binding
        salt and pepper to taste

        put it in the oven and cook until set

        I sometimes add chicken or turkey into this and its good like that too.
        My family says it tastes just like stuffing.

        So I don't know if this helped anyone since I am not good with recipes. lol but maybe it gave you some ideas.

          What I ended up doing was to use 1 loaf of sugar free whole wheat lo carb bread, 7 cups of celery, one onion, one green pepper and 1/2 lb of bacon. It wasn't bad at all...especially cold, and today I found out that i LOST 1 1/2 LBS !!! hOPE EVERYONE HAD A GREAT THANKSGIVING!!
