you can certainly use your ice cream machine to make adkins friendly stuff. use 1/2 whipping cream and 1/2 half & half and then use splenda as a sweetener along with whatever flavoring you desire (make sure its sugar free, & has no carbs)

I love making my own ice cream! I have owned four ice cream makers in my lifetime, and the best one was the cheap $25 one from Walmart. Nothing works as well as the old fashioned kind that use ice and salt (of course, I did go for the motorized one... cranking by hand might be more fun than I can handle).
You can pretty much use any ice cream recipe out there--just substitute splenda for the sugar.
I tend to find the all cream recipes too heavy, so I have been experimenting a little. The liquid part of my recipe I have been making 2/3 cream and 1/3 water. I don't want to add the extra carbs that milk and half and half have, but 100% cream just leaves my mouth feeling like it's been coated with wax! So far so good! You don't even notice that it's been watered down.
For a Bryers type ice cream just use the cream, water, splenda, flavor (vanilla, chocolate...) and a pinch of salt. For a richer ice cream you can make it custard style, by cooking the cream with egg yolks. This thickens the mixture. The more egg you use the thicker it will be. I like the texture of this better, but you need to fully chill it before freezing it in the machine. So, it's a bigger project.
