Whatever recipe you are used to using is fine. just make sure that you are using real mayonnaise, not salad dressing. No sweet relish unless it is splenda sweetened (Mt. Olive brand makes some).

I just use mayonnaise and add whatever spices float my boat that day. Cumin and chili powder for a taco-ish taste. Dill weed is always a nice flavoring. Curry powder is interesting too.

Hard boil eggs. Peel and then slice in half lengthways, scoop out the yolk into a bowl.

Mix the yolk with full fat mayo, perhaps a chopped green onion and whatever seasoning you like. I like paprika, sometimes I add a little curry powder.

Spoon the yolk mix back into the halved whites and enjoy!

we use mayo and white vinegar for an added zing.

          Same for egg salad.

            I adore this recipe!!!

            Servings: Makes 24.

            Ingredients

            12 large eggs

1/3 cup plus 2 tablespoons mayonnaise
2 to 3 teaspoons finely chopped canned chipotle chiles*

            24 fresh cilantro leaves

*Available at some supermarkets, specialty foods stores, and Latin markets.

            Preparation

Place eggs in large saucepan. Add enough cold water to cover. Bring to simmer over high heat. Reduce heat to low; simmer gently 5 minutes. Remove from heat, cover, and let stand 10 minutes. Drain eggs; cover with ice and water and let stand until cold.

Peel eggs and cut in half lengthwise. Spoon yolks into small bowl; arrange whites on platter. Finely grate yolks on small holes of box grater into medium bowl. Mix in mayonnaise, then 2 teaspoons chopped chipotle chiles. Add more chopped chiles, if desired, for more heat. Season filling to taste with salt, if desired. Using pastry bag fitted with 1/2-inch-diameter star tip, pipe filling into egg whites. Cover and chill eggs at least 2 hours and up to 1 day. Press 1 cilantro leaf into filling in each egg and serve.

              Re: deviled eggs!!!

I sometimes take devilled eggs to 'pot luck' occasions and the first time unpacked a messy dishful so now I keep the halves unfilled till I get there and have the filling in a plastic bag.
To fill the halves just snip off the corner of the bag and squeeze the filling onto the egg whites.
Doesnt take long and looks much more appetising!
