  • Holiday Potluck Ideas

    Hey! I am going to a family gathering and it is potluck. I would love some recipe ideas. I am definately looking for something I will enjoy as well as the non-atkiners. Thanks!

    Hi, I copied this from my last post....hope you try it. It is so good.
    Hey Ladies, here is my cheesecake I made tonight. This is the best its come out. Look how thick it is.


    I used 1 full bar and 2oz of cream cheese + a table spoon of splenda. Heat creamcheese until it is very soft.
    1 large box of lemon jello
    used 2 cups of boiling water stir in jello, then stir in 1 cup cold water. I let it cool off.
    Mix in cream cheese, you need a mixer at low speed for only about 10 seconds. Pour in dish and put in refrigerator.

      One time I took Spaghetti Squash and mixed it with a sauce I made up just for spaghetti... and then I put it in a casserole dish and put lots of cheese on top and took a "spaghetti" bake to a potluck. Everyone ate it all up...

      Or you could fix a meatloaf....and take a Salad...

        Depends what phase of Atkins you are in, but

        1. Veggies:
        Steammed veggies with home made hollandaise sauce
        Vegetable salads--green salads, etc.

        2. Casseroles:
        Stuffed cabbage casserole: put shredded cabbage in bottom of casserole, top with a low carb meatloaf mixture, more cabbage on top, bake.

        3. Soups:
        Creamy mushroom
        Broccoli and cheddar
        Pumpkin
