I have this slice of brie in my fridge. It definately doesn't taste very good on it's own. Any ideas on how to use it?

That's odd. Brie should have a mild, buttery-creamy flavor, and maybe a slight "mushroomy" taste. But that can be diminished by cutting away the rind.
Otherwise, I eat my plain and as a dessert because it is so creamy and rich. I guess you can use it in omelettes or melt it and use on vegetables......~Megs~

If it's bitter it may be overripe - brie is anything but bitter. What colour is the rind? It should not be brownish, if it is it is overripe.
I usually eat it raw, but it is also very nice stuffed into chicken breasts.Kate

I agree with Kate, it shouldn't taste bitter. The rind should be intact all over, white and kind of "bouncy" when you touch it. If it looks like it's been rubbed off or worn out in some spots, the Brie is old.~Megs~
