I have actually never used jicama and don't know much about this vegtable other than what I have read, and am wondering if anyone has made French fries or hash browns with them? I am thinking they would make a nice substitute along with eggs and bacon since obviously the ones made with potatoes are out of the question.

Jicama doesn't do well in either situation unfortunately. Although it looks like a potato, it is more of an apple sub than a potato sub.
If you want hashbrowns, try chopping up some radishes and pan frying them in butter and the same spices you would use to make home fries, the taste is eerily close to potato that way, great texture too.

I completely agree with Nullo on this.
You can also use turnips, the kohlrabi bulb, celery root (celeriac), or the diakon radish for "hash browns" or home fries.~Megs~

Yeah, i tried it for french fries and it didnt really brown well, and it kinda stayed hard nad soft so it was like htey werent cooked right, tasted kinda strange... so what are jimicias good for??ORIGINALLY STARTED:

I usually eat them raw with a squirt of fresh lime juice and a sprinkle of cayenne. You can shred them and add it to coleslaw too. They're a good apple substitute, so they do well in a Waldorf salad (traditionally made with apples, celery, mayonnaise and walnuts). I love Jicama and thought it made terrific hash browns, while they didn't get really crisp they have a crisp texture anyway it sort of reminded me of sweet potato, I did however try turnip as a home fry and found it to be really bitter. Was it a bad turnip or just me? I haven't tried it again.
