Thai recipes are fairly easy to tweak for low carb. Sauces that include rice vinegar and sugar can be made with white vinegar and Splenda instead. Replace rice noodles with low carb Japanese "shirataki" or "konnyaku" noodles. Replace rice with grated cauliflower stir fried briefly with a little sesame oil. Take it easy on the curry sauces and use only small amounts of raw unsweetened coconut milk which is fairly moderate in carbs.
One really delicious Thai recipe involves steamed fish with shredded ginger, garlic and black soybeans. That's low carb already.
I also like Vietnamese "salad meals" with stir fried chicken and/or pork, a cup of shredded lettuce, a cup of bean sprouts, some shredded cucumbers and fresh basil and mint leaves. Instead of the traditional vinegar-sugar sauce, I use vinegar, nuoc mam (Vietnamese fish sauce) and chicken broth. This can be sweetened with Splenda but it's fine with no sweetening at all.

Thai and Vietnamese Recipies
All these things you guys are talking about sounds great. Does anyone have recipies for these thai and vietnamese dishes? Also where could i find those low carb japanese noodles.
I can go to one of the asian markets in philadelphia but i dont know if this is like a 'health food' item or not.
