  • Cucumber help

    I love cucumbers and I eat them quite often, but I'm beginning to get a little burned out on them. Does anyone have any ideas on how to spruce up my cucumbers and make them a little more exciting? Right now I've just been putting salt and pepper on them and *yawn* that's a little boring.

    Why don't you make a salad out of them? For example I love the german salad; you can find the recipe on Linda's website. But there are other (easier & faster) recipes, too.

      You could eat them with a little mayo, ranch dressing, blue cheese dressing to dip in...very good as a snack. Just watch the amount of dip.

        I eat them every day for lunch and use them like crackers. Today I used finely diced chicken breast, crumbled bacon, mushrooms, black olives, and green onions mixed with mayo and put a little blob of this mixture on each cucumber slice. I eat a variation of this for lunch every day. Also really good with baked salmon made into a paste with mayo.
        When you get to the end of your rope tie a knot in it and hang on!

          I scoop a little our in the middle and place cream cheese in them. Just like Celery & cream cheese only with a cuke.

            I slice my cucumber, place a piece of smoked salmon on them, & then a slice of Camember or Cheddar cheese on top of that.

              I dice up cukes and tomatoes and put a little Ranch dressing on them. It is great refrigerated as a salad with dinner.

                I like to slice them and put them in a bowl, cover them with vinegar and refridgerate them for a couple of hours, eat them with a little salt and pepper, kinda like pickles!

                  add red onion, vinegar, splenda, salt and pepper-excellent

                  or sour cream, salt and pepper, and a little dill- also excellent

                      I find cucumbers a little blan so I need to spruce mine up too. These are great ideas. I also like to put cream cheese on them.

                        I slice them up and then get a bit of sour cream and a tiny bit of splenda mix together and add the sliced cuke and yum!

                          I scoop out some of the inside and stuff it with cream cheese. I like to use the herb & garlic cream cheese. Yummy

                            I make cucumber salad. I love cucumbers! One of my faves.

                            One english cucumber (sliced thin)
                            One small to medium tomato (ripe)
                            One teaspoon of minced red onion

                            Use one of these "dressings" to toss the mix in:
                            mayo, salt and pepper
                            italian dressing
                            italian dressing and small shake of Salad Supreme
                            sour cream, salt and pepper
                            ranch dressing

                            Now you'll have enough cucumber salad to see you through an entire day...maybe
