  • A yummy, filling lunch 5g of carbs or under

    I'm really tired of having tuna, mashed up boiled egg with mayo. I'm willing to cut out my delicious cream cheese dessert in order to get a more tasty and enjoyable lunch. If theres veggies included, it can only be one cup since I eat the rest in a big salad with dinner. Anybody have a great fulfilling 5g of carbs or less recipe for lunch?

    Shrimp with a couple of green onions chopped through it and mayo, in half an avocado with a green salad. Paprika sprinkled on top. Yum.

      What about stir-fry? It would take a little prep work the night before, but you could combine the protein of your choice (chicken, beef, pork, tofu, shrimp, etc.) with stir-fry veggies (peppers, onions, squash, bamboo shoots, broccoli, etc.). Cook up a big batch, either all ingredients together or meat and veggies separately, and then measure out your portions for each lunch.

      OR

      You could do a stuffed pepper. Make a "salad" (chicken salad, egg salad, shrimp salad, etc.) and stuff it into half of a large bell pepper. Top with cheese, broil until golden and bubbly. You could cook it the night before and just reheat it at work.

        Everything sounds so good! I think I'm going to try the shrimp first because I've never made shrimp at home before. My mom never ate/bought shrimp so I never learned how to cook it. I only ate shrimp at restaurants. Besides, DBF was complaining that he wanted to try something new last night. I tend to cook a lot of the same things every month for him and the kids. I do the same thing where I'm concerned, just low carb. I'm going to make enough for myself and the rest of the family. I bet DBF wont even know its low-carb and I'm not going to tell him either! Not until hes done eating anyways... Thanks for the excellent lunch recipes! I can't wait to try them all! I was really dreading another day of tuna and its hard to stay legal when you hate your food.

          OK, I can tell you a few of the things I do...I eat leftovers a lot though, so if that bothers you, it might be a problem! Tonight it was nice enough to grill, so I made us steaks for supper along with just like stuffed baked potatoes
          3 grms net carbs/serving.

          When the steak was on the grill, I also made some ground chuck burgers for next week-bagged into baggies. After dinner was over, I put the JLSBP in single serving sized containers. I used 2 bags of cauliflower instead of 1, so there were a lot of leftovers. I put 6 in the freezer, and saved 4 for this week. If I have more leftovers this week, I might have those, but if I'm in a rush at least this way, I'm semi-prepared and can just grab a container of TJSBP and a burger and at least I have a good lunch. I also always keep celery sticks and radishes in baggies in the fridge. Week before I also had cucumbers, this week they had red sweet peppers on sale so I will have those and celery this week instead of radishes.
          I found this on the board somewhere and kept a copy for myself & I don't kow the url, but here's a list of 5gm net carb veggies:
