    Pumpkin ? Guacamole

    Since I discovered I actually like pumpkin, I have been trying to find ways to make something different. I have come across pumpkin guacamole mentioned several times lately, but can't find a recipe. I find upscale restaurant reviews with high marks for it, but not a recipe to be found on the internet! I googled until my fingers were numb! I just learned to like guacamole made with avocados and would now like to branch out. The only thing I read was that the texture was like avocado guacamole, so I assume you would make it from fresh pumpkin and mash it to leave small chunks like you do the avocado type.

    Anybody ever make it?? Do you have a recipe or ideas???

      Interesting, but not guacamole. That's salsa over baked pumpkin cubes. I think I'm just going to make a small dish, using canned pumpkin, and just put into it what I do for avocado guacamole.

        Let us know how it turns out. I just can't wrap my head around pumpkin guacamole...

          Anyhow I like to slice fresh, raw pumpkin and use it as lasagna "noodles"---very tasty, imo.
