  • Anyone have a Good, Legal Broccoli Bake recipe??

    I think I'd like to make this at Easter Dinner but I don't know how to make it legally. (YET!)

        I can barely cook an omelet, but I've asked my mom and here's what she suggested.

        Ingredients:

        broccoli flowerets, enough to cover a 8"x4" baking pan
        0.13 cups chicken broth
        0.33 cups shredded swiss cheese
        2 sliced garlic cloves
        1-2 tablespoons olive oil
        1-2 tablespoons pine nuts (depends on the rung)
        salt and pepper
        other seasonings you might want to add: coriander, oregano, chili, basil

        Preparation:

        Heat the oven at 300-350 F.

        Place the broccoli flowerets head up in a 8"x4" baking pan and then pour over the chicken broth. Above all these, add the garlic, then the oil, and finally all the other seasonings you want to use.

        Cover the pan with an aluminium foil and bake for 20-30 min. Then take out and add the cheese. Cover again with the foil, set the heat to 400-450 F, and bake for another ~10 min (or until it's done).


        Just as a note, we don't use the US system of units here, so I had to approximate the quantities and the temperatures (that's why the numbers are weird).

            16 ounces cooked broccoli, chopped
            1/4 c chicken broth
            1/2 tsp each black pepper, garlic powder, onion powder
            4 ounces neufchatel or cream cheese
            2 T dried minced onion

            Butter casserole dish. Combine all ingredients except minced dry onion. (It's easier if you cream the cream cheese and broth together first)Fill casserole, sprinkle with onion and bake 20-25** minutes @350 until heated through and onion topping is crispy.

            ** time may vary---I have a spazzy toaster style oven only

              This is one of my favorites:




              CHEESY BROCCOLI CASSEROLE
              14-16 ounce package frozen broccoli florets
              4 ounces cream cheese, softened
              4 ounces cheddar cheese, shredded
              4 green onions, chopped
              Salt and pepper, to taste
              3 pieces bacon, chopped and fried until crisp


              Cook the broccoli 4-5 minutes or just until tender-crisp; drain very well. Put in a greased 2-quart casserole. Mix in the cream cheese, cheddar, green onion, salt, pepper and bacon. Bake at 350ยบ for 20-30 minutes, until bubbly.

              Makes 4-6 servings
              Can be frozen

              Per 1/4 Recipe: 278 Calories; 22g Fat; 14g Protein; 8g Carbohydrate; 4g Dietary Fiber; 4g Net Carbs
              Per 1/6 Recipe: 185 Calories; 15g Fat; 10g Protein; 6g Carbohydrate; 3g Dietary Fiber; 3g Net Carbs
