  • Creamed Spinach?

    I've been eating the frozen kind from a box. Would like to make my own---I didn't see a recipe in this forum or on the lowcarb site. I'm prettysure it's just cream cheese, some milk, butter and spinach (with seasonings to taste), I just don't know how much of everything and how to cook it right.

    Also if anyone might have any ideas on variations of this, adding other things to jazz it up...etc...please send my way!

    I first put olive oil in a frying pan. I add some pressed garlic. I use frozen spinach(destrost in microwave normally and squeeze out extra liquid). I add this to the garlic and olive oil. When it is almost done I stir in some cream. Of course if you do not care for garlic leave that out. I am sure butter would work in place of the olive oil also.

        I just made some and it was delish. I put a tbsp of butter in a large skillet, melted that and added about 1/2 cup heavy cream. Salt and pepper to taste. Heated it to a simmer and cooked to reduce the cream a bit. Add a 3 cup bag of fresh baby spinach and mix with hot cream in skillet until wilted to the consistency desired. I then sprinkled a 1/2 tsp of xanthan gum over it and stirred it in. This made to nice servings for DH and myself.

          I use fresh spinach, chicken broth, garlic, neufchatel cheese, and NotStarch. YUM!
