recipes involving Atkins bake mix?

I am looking to see if anyone has any recipes for anything using the atkins bake mix? i bought it and really am not finding too many uses for it. lol thanks in advance!

really? just dip chicken in egg and the bake mix and that's it?? taste ok?? any seaonings?

You got it! You can put whatever seasonings you like. I use a little parm. cheese, salt, pepper and a spanish spice blend but really...whatever you fancy!

As far as taste goes I like it better than traditional breading (Much lighter). I had some people over for dinner last night (non atkins eaters) and they raved about it!

Some tricks:

Marinate the chicken in cream overnight, "bread" in the morning (no egg mixture needed) and pop in the fridge for a couple hours. This helps the "breading" stick. Fry it slowly and it's nice and crispy! YUMMY!

It's also great on baked fish, chicken and Turkey!

bake mix

I made the cookies on the package. They weren't bad when you haven't had a cookine in 4 months!!! :laughing

I also took one of my atkins candy bars and cut it up in pieces about the size of a Peanut M&M and set it in the top of each cookie dough ball. It gave a little bit more of a flavoring to the cookies!!
