I am looking for a really tasty burger recipe. I think my burgers are too dry or maybe the meat isn't ground up enough but they always seem to fall apart and don't grill very well.
I'm not sure about burger meat in the UK, but here, the cheaper the ground meat, the higher the fat content, and fat is what keeps the burger from being dry. You need to not handle the meat much when you are making the patties. Add and salt and pepper to the meat instead of sprinkling it on the outside. I make my patties and partially freeze them so they don't fall apart on the grill. This helps make sure the outside gets crispy brown before the inside dries out from over cooking.

Hamburger meat over here is minced beef which I think is quite different from ground beef and I always buy the cheapest but I know that it would be better to do it myself just need to get hold of a good reasonably price meat grinder. Thank you again for the tips which I shall try this evening.-
All I do with mine is chop onion into the minced beef or whatever you are using .. i.e. turkey, lamb, season with whatever you like i.e. salt, pepper, chilli .. crack an egg into it to bind it together. Shape into rounds and either fry or grill them. Easy peasy. I do not by the cheap mince as its way too fatty. I usually buy the steak mince. But you can use whatever you prefer.

I have been all over the place and ended up married to a Northerner from Manchester. We tried living in Manchester for a while but weren't too keen so we came to Cumbria and fell in love with the place. I have friends who live in Dagenham but I am originally from Leytonstone not technically Essex more your East Ender.
I tried your simple burgers and they were so easy to prepare and really nice. I also did some using mustard seed instead of chilli and they were very nice infact hubs had one for his breakfast topped with an egg. I did freeze them overnight and indeed they were easier to cook. Quite proud of myself at least we know what is in them (no carb fillers)
I go for 70 or 75 when making burgers. I add dehydrated onion and some seasoning salt to the mixture, form in patties and grill. When I don't add the onion, I love burgers topped with freshly grated and melted cheddar cheese and sauteed onions. I just throw whatever I'm in the mood for into the mix to make burgers.
I used to live in Dagenham but now live in Romford.. didn't go far not like you .. at least you got out of the rat race of London. I bet you don't miss it.
I'm glad you tried the burgers .. it's a good idea to keep some in the freezer, that way if your feeling hungry there is always a low carb, quick meal you can have. I'll have to try the mustard seed .. sounds deelish.

Shirley, My brother and sister-in-law used to live in Seven Kings and she would take me shopping in Bodgers in Romford I remember it was quite strange shaped shop sort of round on a corner. When I got older my friends and I would go to Romford Palaise to dance on a Saturday night and at 15 I remember being taken to an over 20s night by an older boyfriend who taught me to jive. Memories oh love em.
I make the mustard seed burgers for my hubby who likes hot mustard porkers a sausage for his breakfast, unfortunately sausages seem to contain a few carbs so I am making the burgers in all flavours.
As DogAteMyName says I now just chuck anything in that catches my fancy at the time. I think it is a good idea to make loads so as you say they are always in the freezer for a quick meal.
If your hubby likes spicy burgers, maybe you could try this Thai Burger recipe. It uses ground pork, but you could use beef. I make these all the time and I don't need a thing on them, they are so tasty.
Place everything but ground meat into a food processor and pulse until everything is well chopped. Mix well with ground meat and place in refrigerator for several hours to marinate. A couple of hours before you are ready to grill, lightly form mixture into 6 burger patties and partially freeze. These burgers are very tender and will fall apart before you finish grilling them. Increase grilling time to account for the frozen meat.

I ordered a meat mincer/grinder today from Lakeland. I am lucky enough to live close by and actually get to visit the store quite regularly. I am looking forward to grinding my own hamburger meat including lamb, pork and anything else I can find
I have also ordered jam pots because my garden is full of fruit which needs to be made into jam. I will make most of it to sell or give away this year but I am going to look into diabetic jam as I have gooseberries, raspberries, blackcurrants and redcurrants. I thought I would mix some gooseberries with some elderflowers from a really old fashioned recipe I have found.

We can get low or no sugar pectinto gel jellies and jams. I make it using Splenda all the time. It's really good made as freezer jam. The only difference is that the colours are a little dull and it doesn't have that sparkle like jams made with sugar.
