  • spinach recipe

    I have a bag of baby spinach and it keeps staring at me every time I open the fridge. Does anyone have a non-complicated spinach recipe? I did see a creamed spinach recipe but it calls for a buncha stuff I don't have in my kitchen today! I'm cooking steak in the slow cooker for supper so something to go with that would be awesome!

    You can saute the spinach...Heat butter or oil in a skillet. Add minced garlic (if you like garlic). Cook for a minute until you can smell the garlic. Then add the spinach, toss, until wilted and serve immediately.

    If you like wilted salads, take your spinach and put it in a salad bowl with other veggies of your choice. In a saucepan, heat a couple of tablespoons of oil and on tablespoon of vinegar or lemon juice. Add salt, pepper, and whatever herbs you like. Bring to a light boil. Take off the heat and immediately pour over the spinach toss to coat the spinach. If you want you can fry some bacon and use the fried bacon and the bacon fat, in place of the oil.

        If you want more of a creamed spinach type thing, then cook like suggested above, then pop it in the microwave with some cream cheese and a dollop of butter and zap it til the cream cheese and butter melts take it out stir it and enjoy!

          I make a spinach frittatta. It's just eggs, thawed and drained spinach, and cheese. The amounts used depends on how many people I'm making it for. I like to spice it up with hot red pepper flakes, or pepper jack cheese. I broil it to get a nice golden brown color. It's delish!

            Heat olive oil in the pan. Add cleaned and trimmed spinach. Season very generously with salt pepper and garlic powder. Stir as cooking on low heat. Takes about 10 minutes to be done.

              I love baby spinach mixed in with various lettuce leaves, avocado (tomatoes but I avoid them because I stall) and Newman's Italian Dressing. I also take some goat's cheese and put it under the grill until the top is brown and bubbling, then I place it on top of the salad.
