  • PLEASE HELP- Pizza Crust substitutions

I grew up with the following Crazy Crust Pizza dough recipe. THe batter was similiar to a pancake batter that was poured into the pizza pan, bake and then covered with toppings and baked again. THe results was a thin (but not crispy) pizza that was eated mostly with a knife and fork.

    Here is the recipe...
    1 cup all-purpose flour
    1 teaspoon salt
1 teaspoon dried italian seasoning spices
    1/8 teaspoon black pepper
    2 eggs, lightly beaten
    2/3 cup milk

Pour into well greased pizza pan. Bake at 400 until dough is set (15-20 minutes). Remove and top with favorite ingredients and bake for another 10-15 minutes.

I was hoping to make this more Atkins friendly. Can I substitute soy flour cup for cup? Also, how interchangeable is cream for milk? Maybe I should thin it first with water?

What do you guys think. Pizza with lots of meat, vegetables and cheese with just a smear of tomatoe sauce?

    Thanks for your help.

I love the idea. sort of a pizza quiche. Brook has posted one if you want to look for it.
naja will fix you up as soon as she can. Unless you like the taste of the soy stuff you may want to use a different protein powder. Cream for milk is 1/2 cream 1/2 water

      Pizza help

Before my husband and I started Atkins, we always at our pizza on a tortilla shell. That way we could each make our own. We used the low carb tortillas recently and were very happy. Just put some olive oil in the bottom of a pan, wipe around witha napkin and put in your tortilla with what ever toppings you like. Cover with a lid and watch the bottom. Sometime we have to put it under the broiler to melt the cheese on top. Good luck!

I can't find the thread so I am posting it here. Someone was talking about deep frying a tortilla, letting it drain on paper towels then using it as a crust for pizza. I just wanted to say thank you!! OMG I hate the taste of soy, and even though I really enjoy Linda's low deep dish pizza, the tortilla thing is great for a personal serving! I finish mine off in the toaster oven and it is fantastic! I also use little sauce and Cheddar instead of mozzarella for a stronger flavor of cheese. Eat it while its hot though or it will tend to get soggy on you.

Due to my wheat protein intolerance, I use a rye cracker for 'snack' pizzas.

I just use the Atkins revolution roll batter, and spread it out on a cake pan. Works perfect! If it's too "deep dish" you can just spread them evenly in 2 pans.
