    Looking for a good Eggplant Recipe

    Hi! Does anyone have a good recipe for eggplant that is atkins friendly?

                      If LInda's eggplant recipe is allowed, then can we add mozzarella cheese and a bit of tomato sauce to make it Egg Plant Parmeson?????

                      (I miss my Italian food) I put spaghetti sauce on top if drained canned
                      bean sprouts and think it tastes better than spaghetti squash.

                          There is a really good Eggplant Parmesan recipe in the back of the 2002 DANDR. I tried it, it was really good and I think any legal squash could be substituted for the eggplant. It's a little high in carb count for induction but still legal.
