  • Cooking chicken quarters

    I have some frozen chicken quarters that I would love to cook up. If I am going to do them on the grill do I need to nuke them of boil first to make sure they are cooked in the center? Also, anyone hav some good seasoning to grill them with?

    One more question, if I roast them how do you get the skin nice and crunchy and what are your favorite seasonings for roasting? Thanks.

    I rub the quarters with butter or olive oil. Then I sprinkle on salt, freshly ground black pepper and whatever herbs/spices I have. I put them in a single layer in a baking dish---skin side up. Cover the dish with aluminum foil. Bake at 350 degrees F for about 1 hour. Then remove the cover and continue baking for another 30 minutes---that crisps up the skin. When I serve or store them, I separate the legs from the thighs.

    As for herbs/spices...chicken can take almost anything: curry powder, Italian herbs, Asian flavors like ginger and garlic.

    More often than not, I just use salt and pepper on the chicken. That way, I can use the pan drippings to make a quickie chicken broth. Just remove the cooked chicken, add water to the pan and put it on the stove. Bring it to a boil while scraping the stuff at the bottom of the pan. It makes a really concentrated chicken broth that I freeze in ice cube trays or muffin tins for later use.
