    Mexican chicken anything during induction?

    I am looking for a good mexicanny chicken dish i can eat during induction!

    on the atkins reciepe website there is a receipe for chili cheese pork chops. The chili cheese that you put onto the chops would be great for chicken. It actually reminds me of chimichangas.

      I improvised once and had roasted chicken breast (with skin on) and mixed TBSP of mayo and TBSP of chunky salsa together and slathered in on the top after cooking....pretty good.....but make sure your salsa if store bought doesn't have any sugar in it.

        This is one of my favorite low-carb foods -- the colors and smell are great!

        Slice up boneless skinless chicken breasts, saute in olive oil or butter with julianned yellow, red and green peppers and onion. Add lots of cajun or mexican seasoning and possibly some salt and pepper to taste. Makes a great meal with a salad. I like to add grated cheese to the salad or sometimes I melt cheese on the chicken. Good with salsa and sour cream, if you like. If you're cooking for others, this makes a good fajita filling... just be careful if the tortillas might be a temptation - better go without them if they are! Tastes fine with just green peppers, but the red and yellow add extra flavor and eye appeal.

        The cajun seasoning I use from Costco has garlic, salt, onion, paprika, oregano, white pepper, red pepper and "spice". I now use this instead of mexican or taco seasonings, since they often have thickeners added to them.
