  • Turkey Stuffing

Does anyone have a recipe or suggestion as to what to stuff a turkey with other than bread? I was going to just throw in a couple of onions, but thought I would check here first for some more creative ideas.

    Thank you

Add celery, green pepper, garlic and maybe some chopped jicama. Season with "poultry seasoning" or just salt and pepper.

TVP - Textured Vegetable Protein. Look for it at health food stores. Not sure whether it is Induction legal, but it is low carb.

What about using pork rinds instead of bread? I usually add pork sausage, celery, onion.... and spices... and maybe the rinds would add bulk? I could not find jimaca at our local stores... they say it is not in season yet...

Pork rinds do work well in stuffing, as do all kinds of vegetables.

I just updated the thread on Thanksgiving recipes in Low Carb Cooking Lessons with some tips on low carb stuffing. If you have a holiday recipe you'd like to contribute, please PM me and I'll place it on that thread for everyone to enjoy.

Try also adding nuts in the stuffing for bulk. Hazelnuts are really excellent for this.
