Need an Induction Friendly Pumpkin Muffin Recipe..

Tired of cheesecake pancakes and pumpkin fluff and dont want to see another egg for as long as I live.

Anybody have an induction friendly pumpkin muffin recipe? Variety is the spice of life.

Hi,

This is good:

pumpkin bread

1 oz cream cheese
1 1/2 tbsp ground flax seed
1 med egg
3 tbsp of Pure Pumpkin
2 packets of splenda
1 tsp of Pumpkin Pie spice
Sprinkle of cinnamon on top.

Mix all together and cook in microwave for 4 - 5 minutes. Let cool. Tastes great with a bit of butter spread on it.

OMG. I think I've died and gone to heaven. I made it this morning for breakfast and all I can say is yum yum in my tum and its simple enough for just one serving....I wonder what would happen if I tried to bake it in the oven.......hmmmmm...

Here's my creation - with all natural sugars - OWL rung 3 or higher.

8 oz cream cheese
4 eggs
1/4 C Sorghum
1 1/4 C pumpkin
2t pumpkin pie spice
3/8 C coconut

bake at 350 degrees for 35 minutes. butter pan if not using silicone/non-stick pans

total recipe - 75 carbs
per muffin - 6.25
