depending what rung you on.................
i make the boardwalk fries all the time. i've had the pancakes [i make waffles too] but i ditch the syrup. i'd rather have the berries plain on top.
Boardwalk Fries


4 cups sliced daikon turnip
1/4 cup soy flour to coat - seasoned with salt & pepper
Maryland Crab seasoning to coat
Peanut oil to fry
Low-Carb Pancakes with Blackberry Syrup and Sausage


Pancakes:
1 cup soy flour
1/4 cup wheat flour
4 tsp baking powder
2 tbsp. low carb sweetener
1/4 teaspoon salt
3 eggs
1 1/2 cup half and half
3 tablespoons canola oil
1/2 teaspoon vanilla extract
Syrup:
1 cup blackberries
1 - 2 tsp. butter
1/4 cup low carb syrup
12 sausage links
Pancake Preparation:(approximately 2.5 net carbs per pancake)
Beat oil, eggs, vanilla extract and half and half in a large bowl with a wire whip. Sift in dry ingredients and beat batter until smooth. Don't worry about over-mixing. Preheat large frying pan over medium-medium high heat. Spray pan liberally with canola cooking spray. Spoon a generous tablespoon of batter into pan making sure pancakes don't touch. Flip pancake when bubbles start to form on top. Cook about 2 minutes each side.
Syrup Preparation:
Heat blackberries and butter over low heat. Mash berries with back of spoon. Add low-carb syrup and warm. Serve over pancakes or low carb French toast.
Yields 6 servings (3 pancakes each) with syrup and two links of sausage - approximately 9.5 net carbs per serving
Preheat peanut oil in 375 degree deep fryer. Wash & peel daikon turnip. Trim top and bottom of turnip and discard. Cut turnip in 3-4" chunks. Cut 1/8" of one side so turnip is flat and will not roll. Cut turnip into 1/2" slices. Cut slices into 1/2" strips (objective is to make them french fry size). Lightly coat batches of turnip with soy flour and shake off excess. Fry in oil until well browned - approximately 10 minutes. Season with Maryland Crab seasoning to taste.
Yield 4 servings - approximately 4.5 net carbs per serving

Sherri's Zuchinni Bread
3 eggs
1 cup canola oil
2 cups granule sweetner of your choice
2 cups grated zuchinni
2 tsp. vanilla
1/2 cup chopped walnuts (optional)
1 cup soy flour+ 1 Tbls.
1 cup flaxmeal
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
3 tsp. cinnamon
Beat eggs lightly, mix with oil, sweetner, and zuchinni. Set aside.
Sift together soy flour, flaxmeal, baking powder, baking soda, salt, and cinnamon. Mix wet and dry ingrediants together well. Add vanilla and nuts, mix well.
Grease one bread pan well and dust with 1 Tbls. soy flour. Pour in bread batter. Bake at 325 degrees for 40- 50 minutes. Check with toothpick to see if done.
This is really good with a cream cheese frosting or sliced and toasted in a thick sliced toaster and buttered. Enjoy!
