I roast it. I use finely chop garlic, lemon rind and rosemary. Then I stab the meat with a sharp knife, every two inches. I stuff the garlic mixture into the stab holes. Rub the remaining garlic mixture all over the meat, add salt and pepper. If you have kitchen string, tie the leg up so it's not hanging all over the place. Let the lamb marinate in the refrigerator overnight.
Before cooking, pre heat your oven to 400 degrees. Rub the lamb leg with olive oil, place in a shallow pan. Put it into the oven. After 15 minutes, turn the oven temperature to 325 degrees. Cook it about 20 minutes per pound for a medium rare. After 45 minutes of cooking add 1 cup of water to the pan. If you want about 20 minutes before the lamb is finished cooking you can add cubes of turnips, radishes, onions, whatever you like.
Remove lamb from oven. Allow it to rest for at least 15 minutes before cutting.
