  • Beef Stew or other Slow Cooker recipe

    Does anyone have a good beef stew or beef crock pot/slow cooker recipe?

    I would love to have recipes, too, for the crockpot, since Lipton Onion Soup Mix and Tomatoes are definitely not Induction Friendly.
    What can we use for the sauce? I used to use beer and/or tomatoes for stew. Are the carbs in these things absorbed by the meat? Would it be ok to use these things if we dont use the gravy in the pot? Thanks!

      Toss in what tastes good. I brown the meat in oil, then toss it into the cooker with some water, a can of chicken broth, one small tomato or one small can of tomato sauce, some celery, fennel, maybe some jicama, some crushed garlic, maybe some dried onions or onion powder and other spices to taste.

      The veggies and spices have carbs, especially the tomato. Count them and divide the total by the number of portions in the recipe.

      The alcohol in beer evaporates under heat, but the carbs don't. A small amount of beer or wine wouldn't be a bad addition, just count the carbs and use a smaller amount for flavoring. Alcohol is not OK on Induction however.

        Thanks Naja.
        I currently have in the crockpot:
        a 5 lb pork roast I cooked last night, cut into little cubes & shreds
        a can of Chipotle peppers in adobe sauce, pureed (oooooweee!)
        a cup of chicken stock
        a cup of water
        a BIG tbsp of Garlic
        a squirt of lime juice
        Total carbs for the crockpot is around 19. I am thinking we will get somewhere between 5-10 portions out of it, so the count should be pretty low per portion. I'll let ya know how it turns out.
        I am a huge crockpot user, and its a little hard to have to be so careful of the ingredients....but I am learning! I would welcome any crockpot recipes people have!! TIA

          I have to say the roast came out fabulous. We got 5 portions out of it.... a 5 # roast, it had a bone in it (less than a pound) but it did have quite a bit of fat that rendered off. Anyway, we are figuring we got 5 meals at about 2.5 carbs and ZOWIE! is it nice and hot & smokey! Its not blow your head off hot, but its yummy!

            My favorite beef stew has:
            Beef Stew meat
            Sliced Onions
            Mushrooms
            Heavy Cream
            Ketchup

            (equal parts ketchup to heavy cream)... what can I use to Substitute for the ketchup???

                french onion soup/pot roast

                Prep Time: Minimal
                Effort: Easy

                Ingredients:
                2 lb (or more) Pot Roast Beef Broth to cover, then double amountMozzarella Cheese2 LC Bread Slices (Preferrably Pumpernickel) 1 medium onion or 2 smallGarlic/Garlic Powder to tasteBlack Pepper to taste

                How to Prepare:
                TWO MEAL DEAL! Pot Roast one night/french onion soup the next! In a crock pot, add roast (I use English Beef Roast), add 1/2 medium or 1 small onion, garlic or garlic powder, black pepper (to taste) and beef broth to cover. Cook on low for 8 -10 hours. For pot roast, your good to go with a salad and even some gravy with 1 cup of broth and some Thicken-Thin-Not (low carb starch-like thickener)to make gravy! For French Onion Soup, remove roast and add enough beef broth to double what was originally added to cover roast, add beef boullion if necessary to make stronger broth. Saute in butter, another 1/2 medium or 1 small onion, slice thin, until translucent. Add onion and even a little bit of the roast in small pieces. Toast low carb Rye bread, place in bottom of bowl or crock, sprinkle with mozzarella cheese, add soup and top with more cheese. Microwave or broil until melted and ENJOY! This was a recipe shared with me by a woman in the office and as soon as she told me about it, my mouth started watering! IT'S FANTASTIC! Two meals for the work of one! BONUS! You won't believe the taste! Pass on the LC Bread and make this recipe even lower in carbs.
