  • Induction Version of the Rueben

    Does anyone have an induction legal version recipe of the Rueben Sandwich that I can have when I start induction next week? I am going grocery shopping soon and want to get what I need if there is a recipe. I love Ruebens. Thanks in advance.

    A rueben is corned beef, sauerkraut, Swiss cheese and Russian dressing on rye bread.

    You can "fake" Russian dressing by mixing mayo and ketchup (if you can find low carb ketchup, so much the better)

    I used to eat Rueben sandwiches by using Atkins Revolution Rolls as the "bread". The Revolution Rolls recipe can be found in the "14 Day Induction Forum" thread called "Induction Recipe Basics"

    Or you can skip the sandwich and make a Rueben casserole: combine mayo with an equal amount of softened cream cheese and some ketchup for a sauce. Then layer the corned beef, sauerkraut, Swiss cheese and sauce into a baking dish. Bake until it's all hot and bubbly.

    I like a sprinkling of caraway seeds in the sauerkraut to give it some resemblance of caraway rye bread.

      Don't know if you have tried the muffin in a minute recipe but it is a nice one to tweek to the desired flavor. I cook mine in a soup mug. Just tip out to cool and not let it get so mushy from being in the hot cup and then cut in half. It really has a nice bready texture. And if you are used to the rye bread it will help to feel that craving. However, the flax required is a bit more than allowed on induction "legally". So I definitely wouldn't do more than one of these a week if you truly MUST have one.
